Salad Time

I am back with a recipe. This is one of our favorite salads to eat in the summer. It is pretty much a meal in itself and is refreshing to eat when it gets hot. It also keeps really well so we often take it camping or on picnics.


Pasta, Fruit and Chicken Salad
4 cups cooked pasta (I use rotini)
2 cups cubed, cooked chicken
5 stalks celery, sliced
2 large apples, peeled, cored and chopped
1 cup seedless grapes, halved
1 (20oz) can pineapple tidbits, drained
1 (11oz) can mandarin oranges, drained
3/4 cup mayo
2 T milk
1 T sugar
1/2 tsp salt
pinch black pepper
pinch of nutmeg
cashews or toasted almond slivers

--Mix pasta, chicken, celery and fruit in a large bowl
--Mix mayo, milk, sugar, salt, pepper and nutmeg in a small bowl (I use a whisk to get it smooth)
--combine salad and dressing, toss to coat.
--store in the refrigerator
--garnish with nuts just prior to serving.

Serves 10-12 (yep, that's a lot of salad!)

I love the chicken salad I make with grapes, etc. in it so I'm sure I'd love this one with the pasta too! I'm definitely going to try it. Thanks!
